12/28/2023 0 Comments Homemade margarita mix with steviaAgave Nectar (or Nu Naturals liquid stevia, to taste) fresh lime juice (juice from 1 1/2 limes) So, for those of you in search of a light, low cal and quite tasty cocktail for a girl’s night in, I’ve got you covered. My margarita tastes much more fresh and light because of the lime. I’ve tried Bethanny’s Skinny Girl Margarita, and it’s okay, but I find it lacks flavor and it’s a little too strong. I know all you “skinnnygirl” fans are loving that. It gives the same amount of sweetness with zero calories. But instead of the agave, I use liquid Stevia. It just has three ingredients…which I doctored up a bit. But thanks to the genius of my fellow-margarita loving friend Heather, I can now enjoy a margarita at home, without the bad memories…or the headache. As we know, margaritas are not the lightest drink on the planet and after two (or three) I usually wake up the next morning with an awful memory of too much sour mix (and a headache). And my favorite fun time drink is a Margarita. Thinking about it, I realized that vacation to me usually involves some kind of adult beverage. When I suggested making a healthier French fry to my husband he told me that you would think I was a “psycho” and likely unsubscribe to my blog if I told you that French fries were my memorable vacation meal…so I opted out of that. I do tend to splurge a little on vacation and eat more bread than normal or order French fries. I stick mainly to salads and fish dishes and they all start to taste the same after a while. I’m not a super picky eater, I think I’m just a boring eater. Is it possible I could not think of one meal? I don’t usually have a great vacation-eating experience. The recipe redux topic this month is memorable vacation meals made healthy.
